Changing consumer and market demands is an important driver behind the challenges and opportunities that are facing the agriculture and agri-food sector in Canada and that will influence the sector's profitability and competitiveness in the future. It is therefore important to understand developments in the consumer demand for agriculture and agri-food products. The report provides updated demand elasticities for fourteen food groups in Canada.
